Vegetable Chowder is Warming and Nutritious

Swap the clams or seafood for vegetables and you can make a chowder which is equally thick, rich and tasty, but suitable for non-carnivores as well as those of us who eat meat. There are so many vegetables to choose from and you can swap vegetables for other ones in most of the recipes, so take your pick from the produce available locally and personalize your chowder. Vegetable chowder is nice when you add cream, milk or some of each, to make the soup thick and velvety, and then you can have the vegetable chunks in the soup for a hearty, robust texture. Swap the cream for tomato juice if you like.

Ingredients for Tasty Vegetable Chowder

Cheese is a popular addition to veggie chowder recipes, although not every recipe will require it. Cheese goes nicely with vegetables and complements the creamy soup. A lot of vegetable chowder recipes are made with vegetable stock but if you eat meat and just want to make a chowder without the fish or seafood then use a chicken stock or even a veal stock, for a light and aromatic flavor. Potato and onion usually make an appearance in vegetable chowder recipes, and you might also see celery, carrot, broccoli and other ingredients like that in the finished dish, especially colorful veggies which will look good in the soup.
