All the Flavor without the Fat

A tasty soup does not have to be a fattening one. Although some soups contain quite a large amount of fat in the form of butter, oil or cream, you do not have to use such ingredients to make a great-tasting soup recipe. Using a lean meat or fish rather than a fatty one, and using a stock or bouillon with the fat skimmed off first means you can start off on the right foot. Add vegetables, lemon juice, herbs and spices for flavor, and if you do want a creamy finish choose yogurt or milk rather than full-fat cream. You will get a similar result. Another way to get a creaminess is to use ‘creamy’ veggies like avocado or pumpkin, which puree well and offer a creamy texture.

Low-Fat Soup Possibilities

Choose from all kinds of flavors and styles. Low fat potato soup, old fashioned chicken soup with rice and vegetables, Thai shrimp soup, and gently spiced pumpkin soup are just some of the possibilities, but there are plenty more options. You can adapt soup recipes, swapping the cream for milk or yogurt, or using extra-lean ground meat, or you can use one of our low-fat soup recipes, designed especially for people watching their fat intake. If you usually add a dollop of cream to your soup, this is going to add to the fat count, so you might want to consider your garnishes as well as the soup recipe itself.
