Cream of Broccoli

Cream of Broccoli Soup

Broccoli adds plenty of nutrients to your soup as well as an appetizing color and plenty of flavor. You can sauté broccoli with onion, garlic and other veggies before adding the other ingredients, or you can simply add it to the soup and let it cook. It will take about 8 minutes to become tender or 10 minutes to become soft. If you are pureeing the soup afterwards then let the vegetables get soft because they puree more easily. If you are serving the soup chunky then you might like the chunks a little more al dente, so adjust the cooking time to get the result you want.

Best Creamy Broccoli Soup

Pick out a recipe you like the look of. That might be a potato and broccoli soup or something focusing more on the broccoli itself as the main ingredient. Some recipes might call for cheese, or you could add curry spices to the soup to give it an Indian flavor. Broccoli is low in cholesterol and saturated fat, while offering plenty of vitamins A, C, E and K, as well as iron and other nutrients. If you wish to include it in your next homemade soup there are plenty of options. Use fresh or frozen broccoli, as well as other ingredients to give your soup a wonderful creamy finish, and serve the resulting dish for a vegetarian lunch, or even as an appetizer.
