Squash Soup

Full Flavored Squash Soup

Squash soup is a popular choice, not just for vegetarians, but for anyone who wants to prepare a healthy soup which boasts plenty of vitamins and minerals. If you have squash to use up, soup is often a logical choice. This ingredient works very nicely in soup and you can usually freeze the results depending on the exact nature of the soup recipe. Choose from summer squash, pumpkin, winter squash, or just whatever you can find. Most of the time the ingredients are interchangeable or you can use more than one type, although of course pumpkin offers more sweetness than summer squash, for example. Varieties include butternut squash, zucchini, hubbard squash and more.

Squash Soup Ideas

If you are considering squash soup, you might like to try something rich and creamy like butternut pumpkin and apple soup or classic pumpkin soup with orange and acorn squash. International recipes include Chinese yam soup, curried baked potato and turnip soup, and Asian butternut squash soup. Some of our recipes are low calorie or low carb, while others are more indulgent, so you can take your pick from the list of all the possible recipes to make. Whatever kind of squash you want to use, they all work well in soup and you can either have the soup chunky or pureed, as you prefer. Add other ingredients like cabbage or mushrooms, or keep the flavor simple. Your soup can be however you want it to be.
