  • 1 chicken breast, in 1 inch cubes
  • 6 sliced mushrooms
  • 7 oz can thinly sliced bamboo shoots
  • 4 diced red chilies
  • 1 lightly beaten egg
  • 3 cups chicken broth
  • ½ cup water
  • 2 tablespoons cornstarch, mixed to a paste with water
  • 2 diced scallions
  • 1 clove minced garlic
  • 1 teaspoon white sugar
  • 1 teaspoon minced ginger
  • 2 teaspoons soy sauce
  • 3 tablespoons vinegar
  • 2 teaspoons sesame oil
  1. Add the water and chicken broth to a pot and bring the mixture to a boil.
  2. Add the bamboo shoots, chilies, soy sauce, sugar, mushrooms, garlic, vinegar and ginger.
  3. Cover the pot with a lid.
  4. Cook for 6 minutes.
  5. Add the chicken and stir the soup.
  6. When the chicken is no longer pink in the middle, pour in the beaten egg and stir it gently with a chopstick.
  7. Add the cornstarch mixture and stir the soup until it thickens.
  8. Add the scallions and cook for a couple of minutes.
  9. Serve the hot and sour chicken soup with the sesame oil on top.
