Coconut Curried Chicken Soup

Ingredients
  • 4 oz boneless chicken breast
  • 4 cups chicken broth
  • 1 cup coconut milk
  • ½ teaspoon ground ginger
  • Fish sauce, to taste
  • Lime juice, to taste
  • 2 carrots
  • ½ chopped bell pepper
  • 1 cup broccoli
  • 1 chopped yellow onion
  • 1 minced garlic clove
  • 1 tablespoon curry paste (any kind)
  • Pinch of curry powder
  • Cilantro, for garnish
  • Salt and black pepper, to taste
Instructions
  1. To begin, dice the onions and garlic, and put them in the bottom of your soup pot to fry with a bit of oil.
  2. Fry the onions until they are transparent, and chop the chicken into cubes.
  3. Add the cubes to the pot, and fry until white on the outside.
  4. Put the curry paste into the pot, and mix it into the pot.
  5. Cook it for half a minute or so, and add the chicken broth and coconut milk to the pot.
  6. Leave the heat on medium, and let the soup simmer for half an hour.
  7. Chop the cilantro and basil, and add them into the curry.
  8. Add some lime juice and fish sauce, and add the chopped ginger as well as a little curry powder.
  9. Chop the carrot and broccoli.
  10. Add the carrot 20 minutes before the soup is done.
  11. Add the bell pepper and broccoli 8 minutes before you take the soup off the stove.
  12. Now it is your choice whether you puree the soup to make it smooth or keep it chunky.
  13. Serve the soup with white rice if liked.
