Ingredients
  • 2 pints fish stock or chicken stock
  • 1 teaspoon fish sauce
  • 2 teaspoons lime juice
  • 2 teaspoons white sugar
  • 14 oz coconut milk
  • 1 lb basa fish filets, chopped
  • 1 inch peeled, sliced fresh ginger
  • 1 tablespoon Thai red curry paste
  • 2 teaspoons vegetable oil
  • 1 stalk lemongrass, bruised and sliced finely
  • Sliced red chili pepper, for garnish (optional)
Instructions
  1. Sauté the curry paste in the oil in a pan over a moderate heat for half a minute, stirring it constantly.
  2. Add the fish stock, lemongrass, ginger, and coconut milk and bring the soup to a simmer. Simmer it for 5 minutes.
  3. Add the basa fish and cook for 2 minutes or until it is opaque all the way through and no longer glossy. Stir in as much fish sauce, lime juice, and sugar as you think the recipe needs.
  4. Ladle the soup into serving bowls and garnish with strips of red chili pepper.
